Welcome to the Disney Parks Moms Panel. Congratulations on planning your first trip to Walt Disney World Resort! You've chosen a great time to visit -- during the period from early to mid-November you'll typically enjoy low crowd levels and milder weather (read: no excessive heat and humidity or significant rainfall to contend with!).
Park hours, dining location hours, and entertainment and tour schedules are typically posted online 180 days out so Guests can plan ahead for their visit (particularly for advanced dining reservations), but lately I've noticed that the entertainment, special dining events and tour details have been posted only 90 days ahead or, in some cases, even less (45 days).
I'm also working on a trip itinerary for my November visit and just a week or so ago I was unable to view the entertainment and tour schedules. Like you, I was getting the dreaded "no dates/times available" response. The good news is that the schedules were just very recently updated beyond the end of October 2013. Currently on the Walt Disney World Resort website schedules are posted
through January 23rd (2014), so you should be able to view all the dates and show times for November. I just checked the schedule for Beauty and the Beast-Live on Stage and could see the the show times for every date in November. I recommend you try logging into your My Disney Experience account again and you should be able to go ahead and plan your itinerary.
