Wow, this sounds like an amazing vacation that you are planning, and you will surely win Mom and Grandma of the year!
Linda, coming from a large family myself, I know how important space is when planning a multi-generational trip for the whole family. If you all want to stay in a unit together, your best bet is going to be to book a Grand Villa at a Deluxe Villa Resort. These units generally sleep up to 12 with a full kitchen, and three separate bedrooms and bathrooms. The huge living room and dining areas in the Grand Villas really give you all plenty of space to spread out.
If I were to plan a vacation with all of my family, I would probably choose
Bay Lake Tower at Disney's Contemporary Resort. It is the only resort where you can stay just steps away from the Magic, and can be a lifesaver at the end of a long day. Alternatively, if your crew is planning on spending most of your time at EPCOT and Disney's Hollywood Studios, I would recommend
Disney's Boardwalk Villas, where you can walk to both parks!
If you are looking to stay in a Moderate or Value level of accommodation, I highly recommend
Disney's Caribbean Beach Resort. While you will have to book 3 separate rooms, as the maximum number of guests for these rooms is 5, you should be able to request nearby rooms. Staying at Disney's Caribbean Beach Resort also gives you access to the
Disney Skyliner, which will transport you to EPCOT and Disney's Hollywood Studios in true Disney fashion.
