Thank you for bringing your question to the Disney Parks Mom Panel! There are so many fun things to see and do with a 4-year-old at Walt Disney World. Here are a few of my favorites to get you started:
At Disney's Animal Kingdom we always visit Kilimanjaro's Safari, It's Tough to be a Bug, Pangani Forest Exploration Trail and all the attractions in DinoLand U.S.A.
At Disney's Hollywood Studios we start out with Toy Story Mania. After which, we hit attractions such as Muppet*Vision 3-D, Honey I Shrunk the Kids Movie Set and finish off our day at Fantasmic! fireworks and water show.
Epcot has so many fun attractions we never miss such as Living With the Land, The Seas with Nemo Friends, Turtle Talk with Crush, Spaceship Earth and Illuminations: Reflections of Earth fireworks show.
The Magic Kingdom is a kid's paradise with so many must sees. You are correct to plan two days at this park. My must sees include: Jungle Cruise, Peter Pan's Flight, It's a Small World, Prince Charming Regal Carrousel, Princess Fairytale Hall, Tomorrowland Transit Authority, Monster's, Inc. Laugh Floor and everything in the New Fantasyland. We end our days at the Magic Kingdom with Celebrate the Magic castle projection show and Wishes Nighttime Spectacular fireworks.
For the adults in your group, make sure to hit all the 'mountains' in the Magic Kingdom (Space, Splash and Big Thunder), Rock 'n' Roller Coaster and Tower of Terror in Disney's Hollywood Studios, Expedition Everest and Kali River Rapids in Animal Kingdom and Test Track, Mission: SPACE and Soarin' in Epcot.
