We were planning to take our bags to the hotel the morning of our first day at Disney and then head to MK, however we will arrive too early to check in. Will we have to check in to the hotel in order to use our dining plan that evening at Chef Mickey's?

The ONLY things you probably won't be able to do is get your room (WDW almost always has high occupancy rates, so empty rooms in the morning are rare).  When you arrive you will go through the normal check-in process and you WILL receive your Keys To The Kingdom (with tickets and meal plan).  After check-in, you simply ask bell services to store your luggage, and you are free to enjoy your day at the parks.  If you leave a cell phone number, they often can call you when your room becomes available later in the day.

    Hope that helps!  ºoº

Bonus tip:  It is often faster to walk from the Contemporary Resort to the Magic Kingdom (MK), since the Monorail has to go all the way around Bay Lake (and makes several stops) to get back to the MK.  However from the MK to the Contemporary, the Monorail is a great option, as it is a direct non-stop trip.
