Coronado Springs is a very large resort, comprised of three groups of housing districts: "Casitas", "Ranchos" and "Cabanas."
You may know that all of the "Moms" stayed at Disney's Coronado Springs Resort in December last year. We stayed in Casitas - Building 1, which is the closest building to "El Centro" and the convention facilities. "El Centro" houses the main lobby, the Maya Grill (table service), Pepper Market (food court), and the gift shop. One of the Resort's four bus stops is also at "El Centro."
Unfortunately the Dig Site pool (the main themed pool at the resort) is far away from "Casitas" (the pool is closest to the "Ranchos" rooms). The "Cabanas" rooms are in-between "El Centro" and the pool, and might be a good option if you want to have access to both areas (but you will need to do some walking to get to either area). There are smaller pools in each district, including Casitas.
If you don't care about the Dig Site pool, definitely try to stay at Casitas - Building 1.
