We are a party of 7 when eating at a signature restaurant the gratuity could be as high as $120 or more calculated on the rate added to the bill . Is this compulsory or can I leave what I think is suitable?

For parties of six or more, an 18% gratuity is automatically added to you bill. If you have a problem with the service, you should speak to a manager and there is a possibility that the bill or the gratuity might be adjusted. Other than that, you should expect to pay the 18%. You can read more about tip levels in the post found HERE.

I should also say that I think you're overestimating how much your total tip might be. In order to reach a tip of $120, every member of your party would need to eat at least $95 worth of food at the meal. I eat several signature meals on every visit to WDW and rarely come close to spending this much on a meal.

Let's take Jiko as an example (EXCELLENT food, by the way). The most expensive appetizer is currently $14. The most expensive entree is $39. And the most expensive dessert is $14. Let's add a $10 cocktail and a $10 glass of wine. You're still not at $95. Chances are, not everyone will order the most expensive thing at every course and not everyone will have two drinks. I'm guessing your total gratuity will end up being less than the number you suggest.
