    Hi, Moms Panel! I'm a vegan on a tight budget and can't afford table service restaurants for every meal. What counter-service options can you recommend in Magic Kingdom and Epcot? Thank you.

    Hi, Lindsey!  You'll find there are great options available even at the counter service restaurants throughout the theme parks.  It seems to me that each time I go, I find something else vegan or vegetarian friendly that I hadn't noticed before.

    At the Magic Kingdom, you'll find a delicious Lighthouse sandwich, which combines hummus with tomato and a side of chips.  Ask for it without the broccoli slaw, which is not vegan friendly.  They also serve a vegetarian chili - have them hold the oyster crackers.  

    Cosmic Ray's and Pecos Bill's both have a veggie burger.  I do wan to caution you, however, that you have to ask when you go what type of burger it is.  They often have one made by Malibu Gardenburger, which is vegan friendly.  If they offer one made by Morningstar Farms (which they sometimes have), it is made with dairy.

    The Sunshine Seasons food court in the Land at EPCOT has had a vegan beef with jasmine rice entree that is so yummy, or you can get the vegetable flatbread sandwich minus the hummus/cheese mixture.  Liberty Inn has a vegan "chicken" sandwich that's very tasty, especially topped with guacamole and corn salsa.  Tangerine Cafe in Morrocco has a vegetarian platter and falafal wrap that can both be adapted for a vegan diet.

    When in doubt, just ask.  There are always salads available, and sometimes soups (Be Our Guest French Onion without the cheese).  There may also be options not listed on the menu.  Menu items are subject to change, but these are things that have been pretty readily available on my recent trips.
