What is your opinion on doing two character meals in one day? E.g Crystal Palace for breakfast and Cinderella for Lunch. Will this be to much for my 2 and 5 year old. You guys are really helpful!

My first instinct is that it sounds like too much for one day, but it depends a bit on how many days you are at WDW, and how many meals you have planned the rest of the trip.  To me it isn't so much an issue that they are both character meals (although that makes the answer even easier), but the fact that you want to have two reserved dining experiences in the same day.

If you have the option to fit these two GREAT experiences into two days, I think that would be much more enjoyable.  If you don't, and your breakfast reservation is after 8:30am and before 10am, I'd recommend dropping the Crystal Palace (it will take up too much "prime" time; the first few open hours of the park is best for enjoying the attractions), otherwise it's a tough choice, since both are great meals.  If I had to choose, and we hadn't been to either meal before, I would pick Cinderella's Royal Table because it is a more memorable experience, in my opinion.

Personally, I think one sit down meal (character or non character) per day is the most that my family can handle.  This is especially true if we are planning to be in one of the parks on that day (instead of a break day outside of the parks).  The main issue to me is that they reduce your flexibility, since you feel like you HAVE to be at a specific place at a specific time, and the meals take at least an hour out of your park touring time.  ONE table service meal can provide a nice break, but in my opinion, TWO sit down meals creates too much structure in what would otherwise be a carefree vacation day.

I think this is a simple case of "less is more."  I know it forces you to make some tough choices, but I think your family will be happy that you did.
