It's always a pleasure to assist my fellow guests from the UK, and I fully understand your wish to enjoy some of the spectacular parades at Walt Disney World!
I have some good news for you! I have checked the schedule, and there are some parades and shows planned for every day of your visit. When you arrive in the United States you should be able to see these listed on your My Disney Experience app - and it's also worth checking that daily for any updates.
For your dates of 7th-11th May:
At Magic Kingdom Park I am happy to say that the
Disney Festival of Fantasy Parade is taking place at 3.00pm every day! At 9.00pm you can watch
Happily Ever After every day.
At Disney's Hollywood Studios,
Fantasmic! is showing at 9.00pm (with additional shows at 10.30pm on 10th & 11th May);
Wonderful World of Animation can be seen at 9.00pm (7th-9th May) and at 10.00pm (10th & 11th May).
EPCOT presents
Luminous The Symphony of Us at 9.00pm each day.

If you are thinking of watching a performance of Fantasmic! I highly recommend making reservations for a
Fantasmic! Dining Package. This gives you the best of both worlds - you will enjoy the meal you wanted anyway, but will receive a voucher for VIP seating for a showing of Fantasmic! later the same day. You don't need to turn up at the theater so early, either, so you have more time to enjoy Disney's Hollywood Studios. Reservations can be made up to 60 days in advance, and you have the choice of dining at one of 5 restaurants: Mama Melrose's Ristorante Italiano, Hollywood & Vine, The Hollywood Brown Derby, 50's Prime Time Cafe or Sci-Fi Dine-In Theater Restaurant.
You will be given your Fantasmic! seating voucher when you arrive at your chosen restaurant, which entitles you to a seat in the reserved section on a first come, first served basis. You will not need to arrive at the Hollywood Hills Amphitheater until 25 minutes before showtime, but you can turn up whenever you want to, up to 90 minutes in advance.
