Yes, you can book dinner reservations at parks other than your primary park of the day. However, getting in to that second park is not guaranteed with a dining reservation, so you will want to plan accordingly. I understand your concern, and yes, this can impact where and when you book dining reservations.
The basic rule of Park Hopping, as it stands at the time of this answer, is that you can park hop to a new park after 2 pm, but only if that park you are moving to has availability. As I mentioned, a dining reservation does not guarantee entry, so at busier times of the year you could have a problem getting to your planned dinner.
I am sure that is not the answer you were hoping for, but I will let you know that I have not yet had a problem getting into my second park on any of my visits. Of course, if you were trying to park hop to the Magic Kingdom on December 25th for dinner you are probably going to have a problem. It is all about considering time of year and what park you want to visit.
PERSONAL TAKEAfter looking at your arrival date, I would guess that your plans to dine every evening in
EPCOT are going to be a pretty safe bet. Maybe on a Friday or Saturday night you should consider dining elsewhere, since that park tends to get busier on weekends, but otherwise I would go forward as planned.
