Do you need to buy a day pass ticket if you are only going to eat at Cinderella's Table for dinner? (We are planning to arrive in time for dinner, spend the night and then go to the park the next day)

Yes, you do need to use a park admission ticket any time you enter the theme parks, even if it's only to go to a restaurant. You should bear in mind that the incremental cost of adding a day to a multi-day park ticket can be quite small. For example, currently the price difference between a six-day and a seven-day park ticket is only about $3. That doesn't seem so much to get to your great dinner, and you may even be able to sneak in a few rides while you're there.
