We have met all of the princesses except Mulan (though technically not a princess) and Giselle. Do you know if and where we could meet either of them?

Mulan often greets guests in the China pavilion at Epcot. Check the free Times Guide when you enter the park to see if she has any regularly scheduled meeting times there. If you don't see anything right away, stop by the guest relations office at any of theme parks. Ask them to call the "character hotline" for you. They will be able to tell you where and when Mulan, or any specific character, will be appearing at the time of your visit.

I have not heard any reports of Giselle greeting guests in the parks. However, the character line-up does change with some regularity. Again, stop by the guest relations office at one of the theme parks and they will be able to double-check for you about Giselle.
