Thanksgiving crowds can get fairly sizeable, but not on the scale of the Christmas holiday. You will certainly notice the parks are very busy through Thanksgiving Thursday, but then the volume declines quickly starting that next day. It gets more enjoyable as the days progress, and it should be pretty light by that final Sunday that you mentioned.
As for the dining plans, no word has come out yet as to their return. We all remain hopeful, but for now I would not rely on them returning in time for your trip. It could happen, and that would be great, but November is right around the corner, so I am not counting on it.
BONUS TIPI love going to Walt Disney World during any season, but I think you will truly enjoy the timing of your visit. The holiday decor is truly charming, and the weather is much more temperate. The highs are down into the high 70s, and the lows are in the high 50s. Remember to pack some light jackets for the evening, but know that you will still get that warm summer feeling during your days in the parks!
