I'm happy to hear you've already made your hotel reservations for your trip - one big item checked off your planning list! It sounds like you still might need to purchase your
theme park tickets and make your
theme park reservations for each day you plan to visit the parks.
Since theme park reservations are subject to availability, I would honestly get a bit nervous waiting until a week before the visit to make them (since you need to purchase your tickets before you can make your park reservations). It absolutely could end up being fine, but there is always the possibility that the park you had your heart set on ends up not having enough park reservations available - especially as you get closer to the holidays.
Personally, I don't think I'd risk getting that close before making my park reservations, and there unfortunately would not be a guarantee that park reservations would still be available that close to the dates of your visit. You can keep an eye on that by visiting the
Theme Park Reservation Availability Calendar, which will show you the park reservations by date.
Additionally, make sure to keep an eye on the
