Hi Sarah, Welcome to the Disney Parks Moms Panel! I have personally reduced the number of Guests in my dining party several times in the past and have never lost our Advanced Dining Reservation when doing so. With that being said, I recommend calling Disney Dining directly at (407) WDW-DINE or (407) 939-3463 and ask the friendly Cast Member to modify your existing Advanced Dining Reservation.
