Mama Melrose's Ristorante Italiano does tend to offer Advance Dining Reservations for the
Fantasmic! Dining Package until mid-afternoon. Three o'clock is currently the latest time to search, but when I performed a search on various days, I did have some available times come up a tad later. In my experience, I have been able to secure a later dinner Advance Dining Reservation for Hollywood & Vine with this package.
While dinner in mid-afternoon may not be an ideal time for all families to eat, there is a great alternative. All three of the Disney's Hollywood Studios dining locations that offer this dining package do offer lunch and dinner times. With a belly full of Pork Saltimbocca and Tiramisu from lunch, you may just need a quick bite to eat later that night before heading into the Hollywood Hills Amphitheater to enjoy
