You mentioned that the price you saw one day was different the next. Most likely what may have happened is that that particular
category of verandah stateroom sold out, so now you're seeing the next higher category of verandah stateroom available. So many guests book their Disney cruise vacations each day, it's easy for categories to sell out their last stateroom, and then when you look, you may still see verandah staterooms, but due to the location or size, they may be more expensive than the first ones you saw because now you're viewing a different category of stateroom.
There is also the possibility that the price did increase on the same stateroom category. I can't really know for sure, but I do know that the earlier you book your cruise, the more options and better prices you can find. Perhaps you can find a different stateroom that will suit your budget or browse some of the other sail dates.
