So our family is fixated on pool fun as well. We always have at least one day that is dedicated to no parks. We sleep in, then spend the better part of the day at our resort pool until it is time to get cleaned up for a fun resort-based dinner somewhere.
Because you said you were not that concerned about price, the decision (at least to me) is easy. I would recommend you stay at
Disney's Beach Club Resort. Now every Disney resort has a great pool, but the pool that this resort shares with
Disney's Yacht Club Resort is famous. The
Stormalong Bay Pool is an expansive combination of slides, zero entry sections, and even has a sand bottomed section that makes you feel like you are really at the beach!
Now Deluxe resort are not for everyone, so if I had to pick a resort in the Moderate and Value classes, with an eye to their pools, I would go with
Disney's Caribbean Beach Resort for a Moderate and
Disney's Art of Animation Resort for the Value class.
By the way, with regards to your love of meeting princesses, as I am sure you know there are lots of places to meet them. I happen to love when you can meet some of them in the
Epcot World Showcase national pavilions of the nations that they relate to, like seeing Belle at the France Pavilion. Make sure you use the
My Disney Experience App so that you can see what princess is available to meet and where so that you can catch them before they head off to their next adventure!
