A big hello to a fellow Ontarian Selena! I have not personally used a babysitting service, but know of several people who have and were very pleased. You have two options available to you. You can contact Kid's Nite Out (407-828-0920), an independent, certified and insured childcare services in your resort room. Another option is to enrol your children at one of the several Children's Activity Centres located at various resort Disney resorts. The centres generally stay open until midnight, and offer meals, video games, movies and more on a fee per child basis.
