Thanks for stopping by the Disney Parks Moms Panel. I'm the product of a single momma, and some of my favorite childhood memories are the fun vacations we took together. My first trip to The Mouse was with my mom to Disneyland. The magic we experienced then led me to my job today!
With your family of three, you have plenty of options for attractions! There are a few rides that are two-seaters, and we tend to use Rider Switch for those. But since it sounds like you will be the only adult with the kiddos, that might not work this time around! Barnstormer, Seven Dwarfs Mine Train, Astro Orbiter, Splash Mountain and Slinky Dog Dash are the two-seaters that come to mind as limited for your crew. If you want to tackle Kali River Rapids, you will need another adult as both girls need someone to sit next to in the special kiddo seats. In general, though, with your littles, you will be limited by height restrictions more than anything else.
But no worries! You will have so.much.fun on so many rides!! If everyone meets the height requirement for Soarin’ Around the World, expect to sit kid-parent-kid. Same with Test Track - if everyone is tall enough, all three can fit in the car together. Another "thrill" ride (especially for the kiddos!) is Big Thunder Mountain Railroad, which has a bench seat where you can all ride together.
Haunted Mansion, Pirates of the Caribbean, Frozen Ever After, and “it’s a small world” all fit everyone on the same bench. The whole family can also sit together on The Many Adventures of Winnie the Pooh, Peter Pan's Flight, Toy Story Midway Mania, and Dumbo the Flying Elephant. All in all, most attractions allow you to sit together as a family. Kilimanjaro Safaris is our family's top choice each trip, but good luck with the ensuing debate as to who gets the “window” seat!
