Can you see the illuminations fireworks from any other place apart from the park (some of the hotels, maybe?) I was told that you can have a great view from Canada or Mexico, what do you think about this?

Yes, you can see the IllumiNations fireworks from outside the Epcot World Showcase. I recommend that you try getting an outdoor seat at the Big River Grille and Brewing Works restaurant on the nearby Boardwalk. You will get the most appropriate vantage point, and only the tree-line between the Boardwalk and Epcot will get in the way. If you can't get a table (or don't want to), try to get a railing side view from that right side of the Boardwalk (right side as you view it from the Yacht and Beach Club resorts across the lagoon). It will give you a better angle on the show!

Be aware that a large part of the show is not just the fireworks, but the pyrotechnics on the lagoon, and the lights and lasers associated to the buildings of the World Showcase. As such, you will miss this if you are not in the World Showcase to watch the show. But the fireworks alone are fun to watch, and if you can relax with some food and beverages, all the better!
