Hooray for first stays at the Walt Disney World Resorts! I truly love staying on property and believe you can save time and money.
There are lots of great places to stay all based on budget. Since you are not dealing with a child and stroller, you have even greater flexibility to pick a resort. (When strollers are involved, I like to recommend staying at a deluxe so that you are not always collapsing a stroller and juggling a child and stroller on the bus daily.)
Here are my favorite resorts at every price range. Simply pick one that appeals to you:
Deluxe - Yacht and Beach Club, Polynesian or Boardwalk Inn
Moderate - Port Orleans Riverside or Coronado Springs
Value - Pop Century
As for dining, you should have lots of options at all of the Disney restaurants. When you make Advance Dining Reservations, list that you have Celiac disease so the chef can prepare something for you to eat. At the counter service restaurants, you should have options as well. Just ask a cast member if you do not see something or have them serve you a hamburger without a bun for example. There are also fresh markets that sell fruits and vegetables which should help.
