Celebrating your husband's big 5-0 on the Disney Fantasy will definitely be an unforgettable birthday for him! My first suggestion is to plan on ordering the

DisneyCruise.com. The festive in-room decorations and door magnet will be a constant reminder that this is a special birthday cruise for your hubby! It also comes with a delectable custom cake which can be delivered to your stateroom or to your dining table. Also, stop by Guest Services to pick up his special Birthday Pin so he can recognized by Guests and castmembers on his special day! Another idea is to have a group photo taken with your husband's favorite character as a keepsake. To go along with your photo, you can have a photo mat signed by all the characters if you take it by Guest Services once you embark the ship. Be sure to include sharpies, a few candy treats (as a thank you) and place the mat in a plastic bag labeled with your stateroom number and last name. It will be returned by the end of your vacation.
I'm not sure if you are traveling with children, but dining at the adult-only Palo or Remy for your husband's birthday dinner might be a great option. If you do plan on having children at the birthday dinner, I want something a bit more private than the main dining room, I suggest speaking with the dining staff about setting something up at Cabanas. Cabanas will be less crowded, but still offers some of the same delicious entrees you will find in the main dining rooms.
