my husband and i are not booking a dining plan. can we still walk up to a restaurant and have a meal or do we need to make reservations. we are spontaneous people and don't like to make reservations for our food we just go with what we see is around.

    Kristin,

If you want to eat at any of the counter service restaurants then you will have no problem.  None of them have reservations.  At the  table service restaurants, though, it is highly recommended that you get reservations, since Disney does not hold back any tables for walk-up availability, and many of the restaurants sell out well in advance.

If you still don't want to make reservations in advance, then you can always try to call 407-WDW-DINE while you are in the parks and ask for first available seating in or near the park you are visiting.  If it isn't too busy of a time of year when you visit, you might have several options, but you should be prepared to find that in some cases your best (or only) option will be to eat at a counter service location.

In case you are interested, there is a very funny and helpful one-page section of the Unofficial Guide to WDW called "the Death  of Spontaneity" (page 5 in the 2008 edition). It is the best advice I have ever read about why you really should consider having some type of plan (even if it is a very loose and flexible plan) when you go to WDW.

I know  that some of this response is not what you wanted to hear, but at least I hope you find it helpful.
