The Disney Cast Members are generally very helpful and can answer any specific questions you may have about the ride vehicle seating at a particular attraction. That being said, some attractions and shows have more generous seating than others. For example, each ride vehicle on Dumbo the Flying Elephant technically accommodates two people. However, two adults would be very uncomfortable while a single adult or an adult and child would fit quite comfortably in a Dumbo car.
I would suggest checking out the "WDW at LARGE" section of the AllEars.net website. There you will find a plethora of information including specific details about seat sizes and the best seating locations for each attraction.
Another great resource is PassPorter's Open Mouse for Walt Disney World and the Disney Cruise Line. This book offers detailed information on seating and sizes for every attraction, hotel and restaurant in Walt Disney World!
