The only current Star Wars attraction at WDW is
Star Tours at Disney Hollywood Studios, which provides a simulated flight through space with a somewhat inexperienced pilot. This is one of my children's favorite rides.
Although it isn't a ride, near the entrance to Star tours they recently added a regularly scheduled show of the
Star Wars Jedi Training Academy where young Padawans can be selected to learn expert lightsaber techniques. It is mostly for younger visitors (ages 4-12). Check the Times Guide in the parks for the specific schedule on the day of your visit.
The only other Star Wars related exerience that I can think of at WDW would be the "Build-a-Lightsaber" stand in the Once Upon a Toy store in Downtown Disney. At the store you can select from many diferent building blocks to create your own customized lightsaber. I haven't done this yet, but I know my seven-year-old can't wait to make his lightsaber on our next visit.
Perhaps on your next visit you can time it so that you can experience a
Star Wars Weekends event (typically in late May or June - but dates may vary). This is a perfect experience for Star Wars fans of all ages!
