Since you are going to be at Walt Disney World during Easter, I would definitely suggest checking out some of the Easter events at Walt Disney World. The Magic Kingdom will feature the Easter Bunny during the 3:00 p.m. parade on Easter Sunday, so I would suggest visiting the Magic Kingdom on Easter Sunday.
Many of the resorts will also offer Easter Egg Hunts and a special Easter brunch. I'm not sure what resort you are staying at, but you can call your resort to ask if they are doing anything special on Easter day.
In regards to the rest of your week, I suggest getting the park hopper so you can see and experience as much of Disney as possible during the week. Since you are visiting during a more crowded time of year, the park hopper will allow you to visit the park with Extra Magic Hours in the morning and Extra Evening Magic Hours in the evening. This extends your day quite a bit and will allow you more time to explore.
Since you have an eight-year-old with you, which is close to my son's age, I'll give you my son's top five list for a kid that age:
1. Experience at least one character dining experience - Chef Mickey's is a classic
2. Don't miss Star Tours at Disney's Hollywood Studios
3. Ride Mission Space (Magic Kingdom,) Splash Mountain (Magic Kingdom,) Rock n Roller Coaster (Disney's Hollywood Studios,) and Test Track (Epcot) for thrills.
4. Buy an autograph book on the first day to get autographs of all of the characters
5. Enjoy all the classics, like It's a Small World, Mad Tea Party and Pirates of the Caribbean
