Since you're already booked at one of Disney's All-Star Resorts, I'd recommend calling the Walt Disney World Reservation line today at (407) 939-1936. Ask if you can be moved to one of the Family Suites at
Disney's All-Star Music Resort. These rooms sleep up to six guests and have a Queen Bed, a Twin-Size Sleeper Chair, a Double-Size Sleeper Sofa, and a Twin-Size Sleeper Ottoman. This way, you can all still be under the same resort reservation. You can also just book a second Standard sized room, but as you suspected, you'll need to put your mother in law's name on the second reservation. I'll keep my fingers crossed for you that the Cast Members can work some magic and find a room that accommodates all of you!
