Welcome to the Disney Parks Moms Panel! It sounds like you're well on your way to having your touring plans in place for your trip, which makes it easier to recommend some Magic Your Way ticket options just for you.
I'd suggest starting with a 3-day base ticket, which will let you enjoy 2 full days at Magic Kingdom and 1 full day at Epcot. If you're not planning to visit more than one theme park per day, you won't need the Park Hopper Option added on to the tickets. However, if you'd like the flexibility, just select this option as you're choosing your tickets. My family rarely "park hops," but it's just a matter of personal preference.
If you're planning just 1 day at either Disney's Blizzard Beach or Disney's Typhoon Lagoon, and you don't think you'll take advantage of any of the other activities listed below, I'd recommend skipping the Water Park Fun & More Option and just purchasing those 1-day tickets separately at the gate or online. From a cost perspective, you generally need at least 2 visits to the collective “Water Park & More” locations to make it worth the additional expense.
