I recently had the opportunity to
explore the planet of Batuu and was able to visit both
Savi's Workshop - Handbuilt Lightsabers and
Droid Depot. They are both great experiences, and which one might be "better" for your family is largely a matter of opinion. I'll give you my thoughts on these experiences to help you decide what is best for your family.
As you know, the Resistance must keep their operations hidden from the First Order. Savi's Workshop is tucked away in a nondescript location, disguised as a small scrap metal shop. The gatherers have combed the universe to collect artifacts from the far reaches of the galaxy. This experience is much more than simply building a well-crafted lightsaber. It is a Jedi right of passage, an emotional ritual connecting builders to the Jedi of the past, present and future. Although the description of this experience says it is suitable for ages 5 and up, in my opinion I think it is better suited for teens and up, who may be more in tune with their connection to the Force and understand the significance of the ritual. Practically speaking, I don't think my own children at age 5 would appreciate the quality and authenticity of a handbuilt custom lightsaber; nor would they take care of it as well as they should. They would be better off with a toy replica that they could use in their own play battles.
Building an astromech droid unit at Droid Depot is a more open, interactive experience where your child will be able to take home a new friend. In my opinion, I think this is the better choice for younger children.
If it were me, I would probably split up and have some members of my party visit Savi's Workshop and others do Droid Depot. Since builders at either are permitted to bring a Guest, depending on the number in your party you may be able to have participants and observers at each.
