My DH and I are having a debate. I say that if we add the water park op to the Military Ticket Special, we have 5 days in the major parks and can use the water park option on our 6th/7th days. He says everything is done within the 5 days. Who's right?

You are, of course. :-)

Disney park and water park admission are good until 14 days after first use. This means that you have two weeks in which to use your five theme park admissions AND the five water park or DisneyQuest admissions you will get when you purchase the Water Park Fun & More add-on. In your situation you could certainly enter the theme parks for five days and then go to the water parks for two days.
