I am going to offer up one good stop per park, and a few resort-based favorites.
Magic Kingdom:
The Plaza Restaurant (totally overlooked, but good food and you are not slowed down)
Epcot:
Via Napoli (relaxed dining, best pizza on property, and a fun buzz to the place)
Hollywood Studios:
50s Prime Time Cafe (they may be too old for a character experience, but a little dinner time fun is good for us all)
Animal Kingdom:
Yak and Yeti (good food with some exotic alternatives)
Resorts:
'Ohana in the Magic Kingdom area,
ESPN Club at the BoardWalk, or
Raglan Road at Downtown Disney
