Great question! I used to feel exactly the same way when my daughters were younger, and we didn't spend much time in Epcot because of that.

Agent P's World Showcase Adventure, which very conveniently takes place right amongst the Food & Wine Festival booths. Your child will receive a cool F.O.N.E. (Field Operative Notification Equipment) and set off on a mission to thwart Dr. Doofenshmirtz in one of seven different countries. This is a great way to keep her occupied and enthusiastic about exploring, while you get a chance to do the same!
Beyond the game, there are also two boat rides (in Mexico and Norway), craft stations, street performers, a cool hedge maze (in the UK), and lots of other fun for kids of all ages.
Epcot can be a difficult place to entertain toddlers, but that is not the case with older children, and I think you will be very pleasantly surprised!
