Walt Disney World is poised to handle a variety of guests special dietary needs, including gluten-free diets. I also wanted to know about the gluten-free options available at Walt Disney World and I contacted
Special Diets at Special.Diets@WaltDisneyWorld.com to better understand the options. They were nice enough to send me a list of all of the gluten-free options at WDW.
You will also want to make sure you note your gluten intolerance on all of your Advanced Dining Reservations (ADR.) In many instances, the chef will even come to your table to discuss your special dietary needs and inform you of the menu choices for gluten-free options.
I think that any of of the Disney Dining Plan (DDP) options will work for you. There are many gluten-free options at the Counter Service locations, such as Pecos Bills in Magic Kingdom. They can make any sandwich on the menu on a gluten-free bun. Columbia Harbor House has gluten-free chocolate chip cookies and fried chicken. Many of the Table Service locations can also make special accommodations.
I recommend that you visit orlandoglutenfree.com, which is a comprehensive site dedicated to going gluten-free at Walt Disney World. There are reviews from others with celiac disease, listing of dining options and contact information for special diets for each park at WDW.
