This is our first trip to WDW and we have a 4 & 1 yr. old I was wondering what do we do with our stroller, bags, video camera ect. while enjoying the rides?

There are stroller parking areas outside all the rides, you just leave your stroller there. I've often left diaper bags, etc. in or on my strollers in the parking areas. They've always been perfectly fine. As for anything valuable: cameras, wallets, park tickets, etc. be sure that you bring them with you when you go on the rides. You can bring a bag with you on all the rides. Most of the time the bag can just sit there on the seat next to you. With other rides, there is a special pouch for personal gear right in the ride vehicle.
