    Having just returned from a trip during tropical storm Fay, I can say that my new #1 must have is a fitted rain cover for the stroller!  I certainly hope you won't encounter that much rain on your vacation, but even with a little rain (an hour of rain a day is not unusual for Orlando) they are a great item to have.  SImilarly I'd recommend a pair of shoes like Crocs or flip-flops that can get wet.  If you get your tennis shoes soaked one day, they won't be very comfy (or likely very dry) the next, so a spare pair is great.

    I like to make a trip to the dollar store and pick up disposable rain ponchos (they sell heavy weight ones in the parks for around $8, but I like to be able to throw them away after they get wet).  I also grab lots of little things to entertain the kids on the plane, in lines, and while waiting in restaurants.  Silly putty, play doh, crayons and paper, legos, disney figurines, handheld games, etc are all great.  I also grab glow sticks there for fun in the parks at night.

    Beyond that, I like battery powered handheld fans (also often at the dollar store), snacks and quick breakfast food like granola bars, and a plastic id holder to store my park ticket, room key, driver's license, etc in while touring the parks.  I bought mine at Wal-Mart for around $1.50, and I believe there were 8 of them in a package.
