Remy or Palo. I personally love Palo, and would highly recommend it!
You have a few options when making your reservations so that you don't miss out on a special night in one of the other restaurants on your rotation. I can usually give you a pretty good idea of the dress code themes for each night if you let me know your sail dates and which ship you'll be on. But, since I don't know, you might consider booking for the fourth night or later. I say this because you'll rotate through each of the three main dining restaurants, so by night three you'll have seen all three, including the show night in Animator's Palate. All evenings after that will be repeated in those same restaurants. Why not dine at Palo or Remy later in the cruise when you've already experienced the excitement in the other spots?
If you have the main dining seating (first), you could always make later Palo or Remy reservations so you can join your kiddos for dinner first, then let them enjoy the Youth Clubs while you head off for your reservation. If you have the second seating for dinner, you could either let your kids eat in the Oceaneer's Club and Lab (usually around 5:30, but check your Personal Navigator that day), or take them to dinner at Cabana's Buffet before you head off to your reservation.
