I chatted with a prince of a Cast Member who said that the credit card you used at booking will be refunded the total amount you paid after you redeem those meals from your plan. You can typically expect to see that credit within a week or two. You'll still get an itemized receipt at the end of your meal, but the gratuity will not be included.
If you order any additional items not covered by your plan, such as specialty beverages or extra sides, those will appear on your receipt. You can determine your gratuity based on the meal's total and tip with cash, a credit card, or a Disney Gift Card.
