My family and I are planning a trip to WDW in March. We are going to the BBB at MK at 8am. At 10:40am the same day we are going to chef mickeys. My questions is do we have to use one of our passes to get into MK that day if we want to do a park that day?

You do need to use a park admission ticket to go to the Bibbidi Bobbidi Boutique location in the Magic Kingdom. You will only be allowed to go to the MK BBB if you use a park ticket. (There is a Downtown Disney branch of the BBB which does not require a park admission.)

If you have a basic park pass, you could leave the Magic Kingdom to go to Chef Mickey's and then return to the MK later in the day. If you have a Park Hopper pass, you could leave the Magic Kingdom and then return to any of the four theme parks later in the day.
