I am not a vegetarian myself, but I have had many wonderful non-meat meals at WDW. These are some table service favorites:
- Brown Derby at DHS - Noodle Bowl with Tofu
- Chefs de France at Epcot - Vegetable lasagna
- Restaurant Marrakesh at Epcot - Vegetable Cous-Cous (yummy!)
- Rose and Crown at Epcot - Vegetable Curry
- Teppan Edo at Epcot - Hibachi Noodles and veggies
- Tutto Italia at Epcot - Pasta Primavera
- California Grill at the Contemporary - Pumpkin Ravioli
- The Wave at the Contemporary - Vegetable Stew
- Artist Point at the Wilderness Lodge - Potato Chive Pot Stickers.
Keep in mind that if you're not on the dining plan, you can make a meal of non-entree items. For example, Le Cellier at Epcot is a steak restaurant. The entrees are not very vegetarian friendly. There are, however, several vegetarian appetizers and side dishes that would make a wonderful meal (tomato salad, wild mushroom risotto, grilled asparagus, etc.) The table service restaurants can also modify dishes to suit you. For example, they may be able to leave bacon out of a sauce or take the chicken off a salad. Just ask.
I'm going to refer you to posts by my dear friend Moms Panelist Kara

this at WDW
