Entertainment schedules, especially for events that involve live performers, often aren't available until just a couple of weeks in advance. There is no set time frame for when all schedules are released. In my experience, I usually see all entertainment schedules have been posted by about two weeks in advance. I have found the entertainment schedules end up being pretty similar day to day. I would use the currently available schedule for
Move It! Shake It! MousekeDance It! Street Party to get an estimate of the times it will be showing. In the past, shows have been mid to late morning, around noon, and again in the late afternoon. I was able to find a Times Guide from my visit in November 2018, and showtimes were listed as 10:00, 11:30, and 4:40; the same times currently showing on the August 2019 schedule. In April of 2019, showtimes were 11:00, 12:30, and 5:45, so that gives you an idea of the variation. Keep in mind that of course, all performance times are subject to change.
