We will be at DW 7d/6n with 6d PH plus dining. We are planning on spending the day that we arrive at the pool & DD. Can we use the dining plan that day w/o having used a ticket, or will this cause problems with the # of days we can use the park ticke

Hi, Kim! Sounds like a wonderful, relaxing first day! Your Walt Disney World Dining Plan is valid from the time you check-in until midnight of your check-out day.  You may use the entitlements however you choose until they are gone.  They are not linked to your park tickets in any way.  So, you will have no issues using your plan without entering a park.   Happy planning and have a Magical vacation!
