we are driving down and are staying at a wdw resort. We have tickets for the 1st day (park opens at 7 am) but we can not check in until after 11am. Can we get our tickets, go to the park and then check in in the afternoon? What should we do!

You can go to your WDW resort in the wee hours of the morning to pre-register for your stay. That means for a 7:00 a.m. park opening, you could show up at your hotel as early as about 5:30 a.m. and start the check-in process. You can receive your park tickets, dining plan credits (if you've purchased them), and set up room charging privileges if you'd like. You can leave your luggage with the bell services desk at the hotel, or you can leave it in your car, and then you're ready to head off for a day in the park. The front desk of your hotel will give you a phone number that you can call later in the day to double check that your room is ready.

On another note, I am not aware of any WDW resort that has a check-in time of 11:00 a.m.  11:00 is the stated check-out time for Disney resorts. Most of the hotels have a check-in time of 3:00 p.m. With the Fort Wilderness Campgrounds being slightly earlier and the Disney Vacation Club villas being slightly later. You could call Disney reservations at 407-W-DISNEY to confirm the check-in time for your particular resort.
