So you are going to be in food heaven! FYI, make sure you swing by the Belgium booth (to the Morocco side of the France pavilion). It is a personal favorite (for obvious reasons) and a great recent addition. Moules et frites! Tres bien!

Yes, you can pay with Disney Gift Cards. Have done so many times myself.

As for the added information, since you are foodies, I would say that you probably are good going with the dining plan. But only if you have planned enough meals to use up all the credits. Remember that while you can use some snack credits at the Epcot festival stands for select foods, you are never going to be able to use a table service credit to get one of the snack sized bites. If you leave "credits on the card" when you leave, you end up losing money.
