    I like your overall plan, in terms of the restaurants you have chosen. I will say that your schedule does make it harder for you to take advantage of the evening Extra Magic Hours, though you may not get the chance to use them with a younger child in tow.

    For a "replacement" for dinner at 1900 Park Fair, since you are planning on being at Epcot, I would suggest that you pick a restaurant in the Epcot World Showcase. You have 10 nations to choose from (no USA table service restaurant), and each has one, in some cases two great restaurants. I think you should pick one or two cuisines that you would like to try, and go for one of those. In an earlier reply to you I recommended a few, but in addition to those I also like the San Angel Inn (Mexico), Tutto Italia (Italy), Nine Dragons (China), Les Chefs de France (France), Le Cellier (Canada), and Tokyo Dining (Japan).
