Lorraine,
I would use Extra Magic Hours from the day you arrive through Friday the 17th. After that the crowds will be large enough to avoid them.
Also, on your departure day I would make that your resort relaxation day before you return home. Sleep in, enjoy the pool, and leave the parks in your past. The huge crowds could ruin your last day of vacation otherwise.

As for making your girls birthday's special, I have you at the Magic Kingdom that day. However, I would leave the park and go to one of the great resort restaurants for dinner. I love
California Grill and
Narcoossee's for the fantastic food and great views.
'Ohana is fun too, with equally spectacular views.
Why not look at those and let me know if you would prefer a suggestion of a different variety!
Have a magical vacation!
