Hi Shelly,
Last minute trips are fun! I truly love just deciding to go to Disney and then go! The Dolphin location allows you to walk or take a boat to two theme parks which means no moving sleepy children from strollers at the end of a long day of touring.
First, I would say think tickets. I recommend a
Magic Your Way base ticket without the Hopper options because your children are little. Dedicate each day to a single park and then go from there. I would look at each park's hours and plan which day you want to go where.
Once you decided on a park, make your
Advance Dining Reservations. My family always has dinner planned because it helps us recover, take a breath and decide how we want to finish the day out. Character meals are fun and they also provide a way to see characters and eat at the same time. Also, some of the best dining is outside of the parks at the Walt Disney Resorts.
After this, think about what you want to see in each park. Pick a few highlights and fill in from there.
Finally, stick to your little ones schedule. If a midday break is a must, do it. If they do not get up and out easily until 10 am, no early breakfasts. If they are night owls, then stay late. Keeping them on track will be the best you can do for a magical experience.
Last look at

Have a magical vacation!
