Christopher, thanks for bringing you great question to the Moms Panel! I remember touring The Living Seas Pavillion as a teenager, which opened to great fanfare in Epcot in 1986. It has undergone a transformation since then, but some fun facts remain the same. The massive 5.7-million-gallon saltwater aquarium contains over 6,000 marine creatures including sea turtles and sharks, and is big enough that Spaceship Earth would fit inside, with room to spare!
Unfortunately, I couldn't find an aquarium cleaning schedule, but I do know that if you go up to the Observation Deck on Level Two of
The Seas with Nemo & Friends, there is a Duty Roster which is a posted schedule of daily activities and presentations. I was lucky to be up there once when they were feeding the manatees. Catch the fish feedings at 10:00 AM and 3:30 PM, when a Cast Member will describe the rays, sea turtles and fish you see in the aquarium.

Dolphins in Depth where you can learn how the dolphins are cared for and trained.
Lastly, consider dining at the
Coral Reef Restaurant. My sister-in-law surprised my brother-in-law while dining here on his birthday by arranging for a diver to hold up a "Happy 40th Birthday" sign!
