At the Disneyland resort, is there a location to store your newly built lightsaber so you don't have to carry it around all day and possibly have it stolen/damaged?

Bright Suns, Joshua! This is one of the official greetings I’m sure you will hear on your visit to Batuu.

It sounds like you have a great plan to visit the gatherers at Savi’s Workshop to build your custom lightsaber, learn the ways of the jedi, and join the Force. On my many visits to Black Spire Outpost, I have seen countless younglings and new jedis proudly carrying their new galaxy-defending weapons in their padded sheaths on attractions throughout Disneyland Park.

Since you don’t want to carry it around and risk damage, I would recommend that you mention to the gatherers that you would like your send your lightsaber to your home planet. They will direct you to First Order Cargo, where a cast member can help you ship it. I recently had a couple of friends ship three sabers home, and all arrived quickly and safely.

Another option for you is to store your deconstructed light saber in one of the jumbo lockers located outside the parks entrance. The smaller lockers inside the park are a bit too small to store such a powerful weapon.
Once you have built your new blade, be sure to stop by Doc-Ondar’s Den of Aniquities to check out the customizations for light sabers, as well as other awesome merchandise.

I hope you have a fantastic visit to Disneyland Resort and Star Wars: Galaxy’s Edge!
