Many items at many restaurants can be adapted to a vegan diet, and many restaurants offer an allergy/vegetarian menu to choose from.
My go to place is
Tangerine Cafe, located in the Morocco pavilion at Epcot. With a delicious vegetable platter that even my non-vegetarian family members will eat, I know for sure my vegan peeps can find food here.
The crispy fried tofu bowls at
Satu'li Canteen at Disney's Animal Kingdom is to "dine" for. Seriously one of the best counter service offerings, you can customize the dish by choosing your base and your sauce (at the moment, only the charred green onion vinaigrette is vegan, however others are vegetarian). You also get boba balls on top of your dish, and I encourage you to ask if they're vegan when you go, as they have changed a few times since the restaurant opened.

Sanaa At Disney's Animal Kingdom Villas - Kidani Village not only has a vegetarian menu, but they feature several vegan options in everything from their bread service to their side dishes. With the emphasis on Indian and African flavors, you'll find lots of wonderful food here. And
Boma - Flavors of Africa is a buffet where a member of the culinary team will walk you through to point out your best choices. Hit up the soup selections - many of which are vegan.
